Ingredients:
90g flour (I use gluten-free oat flour)1 tsp bicarbonate of soda
1 tsp vanilla extract
1/2 tsp ground cinnamon
5 tbsp maple syrup
2 eggs
100g melted butter
2 tsp orange zest
Method:
- Soak 1 tbsp chia seeds in 3 tbsp of milk (of your choice).
- Pre-heat the oven to 200C and grease a madeleine tray with butter.
- Mix the flour and bicarbonate of soda in a bowl.
- In a separate bowl mix the syrup, egg, vanilla and cinnamon until fluffy then stir in the melted butter and orange zest.
- Gently fold the dry ingredients into the wet until you have a smooth mixture folding in the chia seeds at the end.
- Pour approximately 1 large tablespoon into each mould and then bake in the middle of the oven for 10 minutes.
- Once removed from the oven, allow the madeleines cool down on a rack before dusting them with icing sugar (optional).
